Job Summary: Executive Chef – New Healthy Dining Restaurant (Vanuatu)
We are seeking an experienced and passionate Executive Chef to lead the culinary vision of a brand-new restaurant opening soon in Vanuatu. This exciting new venue will specialize in healthy yet indulgent cuisine, celebrating the richness of Vanuatu’s finest local ingredients with a commitment to freshness, flavour, and innovation.
As the Executive Chef, you will be responsible for menu creation, food preparation, kitchen leadership, and maintaining the highest standards of cleanliness and food safety. You will be expected to bring a keen eye for detail, a deep understanding of nutritious cooking, and the ability to craft exceptional dishes that are both nourishing and satisfying.
Key responsibilities include:
Designing seasonal menus featuring locally sourced, organic produce and sustainably caught seafood.
Maintaining exceptional hygiene and cleanliness throughout the kitchen in line with international standards.
Implementing cost-effective food planning and stock control measures to minimise waste and improve operational efficiency.
Leading, mentoring, and training kitchen staff to deliver outstanding food experiences consistently.
Working closely with suppliers, farmers, and local producers to ensure the highest quality ingredients.

Selection Criteria:
Selection Criteria – Executive Chef
To be successful in this role, applicants must demonstrate the following:
Proven Experience in a Head or Executive Chef Role
Minimum 5 years' experience in leading kitchen operations within high-quality dining establishments, with a focus on health-conscious or innovative cuisine preferred.
Menu Development & Culinary Creativity
Demonstrated ability to design and implement menus that are both nutritious and appealing, using local, seasonal, and sustainable ingredients.
Strong Knowledge of Food Safety Standards
Thorough understanding of and commitment to maintaining international standards of cleanliness, hygiene, and food safety in a commercial kitchen environment.
Leadership and Team Development Skills
Proven ability to lead, mentor, and inspire a kitchen team, fostering a culture of professionalism, efficiency, and continuous improvement.
Cost Control and Waste Minimisation Expertise
Experience in implementing effective food planning, portion control, stock rotation, and other systems to minimise waste and manage kitchen budgets.
Excellent Communication and Organisational Skills
Ability to liaise confidently with front-of-house teams, suppliers, and management, with strong planning, time management, and inventory control capabilities.
Passion for Local Culture and Ingredients
A genuine appreciation for Vanuatu’s food culture, with a commitment to supporting local farmers, fishermen, and producers.
Salary:
120,000 - 140,000 vatu/month
