Job Desctiption:
The commis is responsible for supporting the chef de partie with all the preparation for the mis-en-place of the menus and to work during the service where ever assigned
Selection Criteria:
Tasks and Responsibilities
• Cooks consistently and enthusiastically on a high level as directed by the chef or management.
• Has fun cooking and loves his job!
• Assist in creating and cooking to perfection all the items of "a la carte" menu and the other available fare like specials, functions and picnics.
• Comes up with innovative ideas and recipes as he/she participate and inter-act with the kitchen brigade.
• Cook and prepare for each service the necessary mis-en-place for the menu requirement.
• Assist during the service with the cooking of the menu items as ordered by the chef in service.
• Ensure that stock is rotated and controlled within the specific section of the kitchen.
• Follow cleaning schedule.
• Making sure his/her station and its environment (kitchen and store rooms) is spotless clean and hygiene is kept up at all times. Maintains personal tidy appearance and works in a highly hygiene manner.
• Ensure the cost of food is kept in line by following recipes and portion controlled items.
• Follow all company safety and security policies and procedures; report accidents, injuries, and unsafe work conditions to manager.
• Follow all company policies and procedures; ensure uniform and personal appearances are clean and professional; maintain confidentiality of proprietary information; protect company assets.
• Welcome and acknowledge all guests according to company standards; anticipate and address guests' service needs; assist individuals with disabilities; thank guests with genuine appreciation.
• Speak with others using clear and professional language.
• Develop and maintain positive working relationships with others.
• Comply with quality assurance expectations and standards.
• Perform other reasonable job duties as requested by Supervisors and Management.
Required Knowledge/Skills/Job Qualifications:
• Completion of cookery certificate or diploma or a minimum of two years in a 5 star restaurant / Resort kitchen as a kitchen hand.
• Excellent communication skills in English (oral and written). Fluency in a foreign language is an added advantage.
• Passion for cooking and for continuously learning new ideas.
• Mentally organised and comfortable to work in a high pressure environment.
• Experienced in using cost control and costing procedures (or programs).
• Proven track of ensuring customer satisfaction.
• Highly motivated and passionate about the job and his/her career in the resort.
