Coconut Palms Resort is seeking for a suitable candidate for the position of Food & Beverage Manager



Duties and Responsibilities:

1) Be hands on!!! Lead by example and have your finger on the pulse & address and resolve service issues and areas of service improvement

2) Manage and monitor manpower planning, wages, Food & Beverage expenses and cost of sales. Take corrective actions, as required, to ensure budgetary targets are met

3) In collaboration with the Chef design and implement new menus to reflect current food trends and customer expectations

4) Provide support, training and guidance to all associates. Implement the induction processes and other training programs (e.g.: cross training) as required

5) Develop and implement promotions calendar for Food & Beverage products and outlets. Create positive publicity opportunities to build profile of Food &Beverage outlets and personalities (Chef/ Restaurant Manager). Provide concepts for promoting food/ beverage products or outlets

6) Manage and utilize customer database and work collaboratively with Banquet, Functions and Sales to maximise customer satisfaction and revenue generation opportunities & conduct competitor analysis, co-ordinating market research and analysing results. Anticipate market changes and review operations when necessary

7) Manage and monitor the implementation of purchasing procedures. Adhere to group purchasing arrangements in order to maintain profitability, cost control and utilize maximum advantage of group purchasing power

8) Develop, implement and monitor effective stock control procedures & recruit, support and develop direct reports. Conduct regular appraisals and provide feedback to maximise performance

9) Oversee and monitor recruitment related activities for the department, ensuring compliance with organisational standards, policies and procedures

10) Identify and develop high potential talent & update, develop and implement Local Standard Operating Procedures (LSOPs) in conjunction with the General Manager. Ensure training in LSOPs occurs and standards are adhered to

11) Ensure daily shift briefings are conducted and regular team meetings are held to encourage effective two way communication, facilitate operational improvements and maintain high morale

12) Ensure excellence and consistency in guest service & manage guest interactions with the utmost professionalism.

Interested applicant must possess the following:

Criteria:

- Business degree from a recognize university; Professional qualifications in hospitality management desirable; Minimum 2 years experience in a food and beverage supervisory role within a 4/5 star

hotel/resort/restaurant

- Worked for a hospitality group with more than three properties; Strong business acumen including budgets, revenues and cost factors; Excellent communication skills (both written and verbal)

- Exceptional organisational skills with clear focus on quality and service standards; Multi-outlet experience -a la carte experience essential; Strong leadership, training and staff management skills.
